SUMMER MENU AT PERCORSO
Percorso Restaurant presents its summer menu crafted by chefs Luca De Astis and Davide Giacomelli. The new dishes embody the lightness and freshness of the season: classic Italian recipes are enhanced with vibrant touches while preserving the cuisine’s distinctive character.
The culinary highlights offer a refined taste narrative. The Kamchatka crab phalanx on romaine salad with Marie‑Rose sauce, arugula, and a crispy seed tuile is designed for leisurely enjoyment with companions—perfect paired with a glass of Prosecco. The crespelle with chives, asparagus, morels, and Parmesan delight with a balance of tenderness and crunch, accentuated by a golden gratinated crust. An unexpected yet impeccably harmonious pairing emerges in the black cod puttanesca: northern fish meets southern anchovies, capers, and olives.
Pasta takes centre stage: rigatoni all’Amatriciana is served with a table‑side show, while spaghetti chitarra with crab and bottarga reveals subtle flavour nuances. The dessert menu is complemented by a Sicilian‑style cassata and the classic tiramisu—the perfect finale to the meal.
