Tradition, freshness, balance, extravagance – all this can be found in the updated sake set from izakaya restaurant and bar Sintoho. For each of the four types of sake selected by chef-sommelier Igor Smirnov, the chef of the Sintoho restaurant Badma Aducheev has developed his ideal culinary addition. Elegant, simple, harmonious - another gastronomic proof that the East is a delicate matter.

  • The set opens with a bright tandem of Hakushika Kasen Chokara sake and scallop tiradito. Slightly burnt slices of Far Eastern scallop in ginger-truffle sauce perfectly complement the taste of one of the most traditional types of sake, well known for its yeast notes. This combination allows you to prepare your taste buds as well as possible for the continuation of dinner. 

  • The following is suggested to evaluate the combination of Hakushika Ginzo Namachoz sake and nigiri with big-eyed tuna and soy sauce. A chilled slice of fish with a small part of wasabi, which adds a spice to the taste, combined with warm rice harmoniously complements this classic kind of sake. And thanks to the "lively" properties of the drink, this combination distinguishes freshness and brightness of flavors. 

  • Hakushika “Snow Beauty” sake is served with blanched pak choi with maple sauce and furikake, whose crispy texture and sweet aftertaste create the perfect balance in combination with the floral and cheesy flavors of the drink. 

  • We finish the set with a dessert combination – a variety of sake Hakushika Hana-Kohaku paired with a cheesecake and grapefruit. The soft sake has a sweet aroma with subtle hints of plum stone in a harmonious aftertaste, complemented by tones of exotic fruits and light notes of cheese, which makes the vanilla base of the cheesecake a worthy partner in the final round.
